Thanks to its vibrant purple color and exotic name, ube is become the darling of social media. So what is ube and where did it come from?

Ube is made of purple sweet potatoes. Popular in the Philippines, it is used mainly in desserts . . . but also it finds its way into candy, jam and pudding.

So what is the flavor of ube? Well, it is cross between vanilla and pistachio. Given the mild, sweet flavor profile, ube is also a common ingredient in food coloring.

A quick note: ube is not taro. Even though it is similar in color, taro and ube are different plants. Ube is a darker, richer purple hue than taro. 

We did blind taste tests with ube in several forms: powder and extract, mixes and condensed milk. The powder is great for ube bubble tea; we also like it mixed with yogurt. The extract is better for baking—turning icing that brilliant shade of purple.
