Taste Testing Pumpkin Spice Coffee Creamer

When it comes to pumpkin spice coffee, you have two basic choices: brew some pumpkin pie spice coffee infused beans, or just use your regular coffee and add pumpkin spice coffee creamer.

Creamy Pumpkin Pie Soup

Ingredients

  • 2 tablespoons butter
  • 1 small onion, chopped
  • 1 clove garlic, finely chopped
  • 1/4 teaspoon ground black pepper
  • 2 1/2 cups reduced-sodium chicken broth
  • 1 can (15 ounces) LIBBY’S® 100% Pure Pumpkin
  • 1/4 cup Coffee mate® Pumpkin Spice Flavor Liquid Coffee Creamer
     

Step 1

Melt butter in large saucepan over medium heat. Add onion; cook, stirring occasionally, for 7 minutes or until tender. Add garlic; cook for 30 seconds or until fragrant. Season with pepper.

Step 2

Stir in broth and pumpkin. Bring to a boil, stirring occasionally. Reduce heat to medium-low; cook, stirring occasionally, for 10 minutes. Stir in Coffee mate Pumpkin Spice Flavor Liquid. Let cool slightly.

Step 3

Transfer mixture to food processor or blender (in batches, if necessary); cover. Process until smooth. Return to saucepan if needed to heat through. Serve warm. Garnish with pepitas, if desired.

Sucralose, also known as Splenda, is the sweetener here and wow, did we love the taste! This creamer even won over folks who aren't big coffee lovers. Caveat: contains a milk derivative, so perhaps this one isn't the best for vegans.
