Finding The Best Powdered Scrambled Eggs . . . And A Recipe

Powdered eggs are great for camping, backpacking and emergency food storage. Why? They require no refrigeration . . . and there is no spoilage. 

In researching powdered scrambled eggs, we found that you have two basic choices for packaging: #10 cans and resealable pouches. The cans are handy for long-term storage—powdered eggs in a sealed can last for up to 10 years. 

Pouches are more portable and hence better for camping or backpacking. They also tend to be portioned for short-term use.

Before we get to the winners of our blind taste test, here is a recipe for using these scrambled eggs to make breakfast tacos.

Recipe: Breakfast Tacos

Ingredients

  • 6 tortillas (flour or corn)
  • 2 tablespoons butter or oil.
  • 2 1/2 tablespoon Augason Farms dehydrated chopped onions prepared
  • 1 clove garlic, minced
  • 1/4 teaspoon ground cumin
  • 3/4 cup Augason Farms scrambled egg mix, prepared in 1 1/2 cup water
  • 1/2 cup salsa, divided
  • 1 1/2 cups shredded cheddar cheese, divided.

Directions

  1. Heat tortillas in microwave on high for 6-7 seconds per tortilla or in aluminum foil in oven for 15 minutes at 350 degrees.
  2. In large frying pan, melt butter or oil over medium heat. Add onion, garlic and cumin. Sauté until onion is translucent. Pour in eggs and 1/4 cup salsa; scramble until eggs are thickened and remove from heat. 
  3. Fill center of tortillas, one at a time (keep tortillas covered as you work with them) with scramble egg mixture. Sprinkle with approximately 3 tablespoons of cheddar cheese. Fold tortillas and serve with remaining salsa and cheddar cheese.
